Full of freshness and tang, this dish was an early favorite. Saw it on an old list and had to rehash it. The pesto could be used elsewhere, very good.
- I used real linguini -half spinach, half plain – as a bed. I included lots of julienned carrot but it was not a pasta replacement.
- I threw in almost a cup of frozen edamame with the asparagus
- It’s easier to rinse the leek if sliced lengthwise then halfmoons.
