“Glowing” Green Pasta Primavera w/ Sundried Tomato Pesto

Full of freshness and tang, this dish was an early favorite. Saw it on an old list and had to rehash it. The pesto could be used elsewhere, very good.

  • I used real linguini -half spinach, half plain – as a bed. I included lots of julienned carrot but it was not a pasta replacement.
  • I threw in almost a cup of frozen edamame with the asparagus
  • It’s easier to rinse the leek if sliced lengthwise then halfmoons.
