This pair of recipes was simple, fast and delicious. We probably should have bought bigger sweet potatoes, because we ate two each, and then had to leave the last lonely one for a lunch the next day.
This dish is great served slightly warm over a bed of greens, and is delicious enough that we’ve already tried it out on others. It’s garnered ‘seconds, please’ approval from picky eaters.
Big meal – this was a long endeavour, but these can be made separately. I was so hungry by the time I finished that I couldn’t think straight, so I didn’t take any pictures.
